Un-Forgetti Spaghetti🍝

This is the one pasta dish you will never forget! One thing about me is that I will never pass on a bowl of carbs, and pasta has to be up there with one of my all-time faves. This dish will transport you to Italy and best served with a massive glass of red wine!!

NEEDS:

- Pasta (obviously). This can be whatever style you like, but I love the long and thick fettuccine with this.

- Passata

- Garlic

- Onion

- Fresh tomatoes

- Nduja

- Sugar and salt

WANTS:

- Parmesan

- Truffle (if you are a boujee bitch!)

- Balsamic vinegar

Let's get started!

1. Begin by boiling your kettle.

2. Finely chop your onions, garlic, and slice your tomatoes.

3. Heat up a large pan and drizzle it with oil. Tip! I like to use garlic oil here for more flavour, but normal olive oil will do just fine.

4. Add your nduja to the pan, and break it up with a wooden spoon.

5. Once it starts to cook, toss in your onion, garlic, and fresh tomatoes. Cook these until they are glossy.

6. Now, add 1 cup of passata. Put a lid on it and let it bubble.

7. When it starts to reduce, add your balsamic, truffle oil, and a sprinkle of salt and sugar.

8. While the sauce is reducing, add the boiling water to a separate pan of pasta (with a pinch of salt!). Cook it until it's al dente.

9. Once it's al dente, add the pasta to your silky sauce alongside some pasta water.

10. Mix this until all your pasta is covered.

11. Now for the best part, shower the pasta with parmesan!!!
