You Will Double Dip.. 🤤The BEST Hummus

Just come back from spin class, and I need something filling, tasty and most importantly, QUICK. I am ravenous, and if you are ever (unfortunately for you) in the same position, I would highly recommend my quick chicken, greens and drum roll, hummus salad.

Ok lets go!!!

NEEDS:

  • Chicken 

  • Greens (I used broccoli, asparagus,and spring greens. Mainly as they were looking lonely and old in the fridge) 

  • Chickpeas

  • Tahini 

  • Harissa paste 

WANTS:

  • Feta 

  • Chilli 

Hummus:

So my favourite thing about hummus is that (sorry if this is completely off the ball) you can basically chuck anything into it. This is how I make mine, but feel free to start experimenting 

  • Grab yourself a food processor and throw in a can of chickpeas, 3 table spoons of tahini, a whole chilli (afterthought, this was spicy, so you have been warned!) pinch of salt, oil and water 

Then blend, blend, blend. I like mine thick, but you can make this to your own consistency. Honestly it is that simple!

Now, down to the rest of it!

  • Firstly, get some flavour added to your chicken! Here I used harissa paste, salt and garlic. Make sure this is fully coated, and leave the girl to oneside 

  • Heat up your pan with oil, a splash of water and throw in your chopped greens. Cook these until they have sauteed 

  • Once done, plate these up!

  • In the same pan (you know we don't like washing up here!) add your chickpeas and cook these until golden, once done, remove and lay on some kitchen paper

  • You guessed it, same pan! Add your chicken and cook on both sides until done 

  • Layer your greens and chicken. Top with feta, chickpeas and delicious hummus

This was all done in 15 mins. Leave the washing up until tomorrow. You have been at the gym, you need a lie down.
