Hurry? Let's Talk Curry… 🌱
Do you ever come home from work feeling absolutely freezing, only to be greeted by the sad sight of lonely vegetables in the fridge? I have the perfect solution for you – a homemade curry and naan recipe that will warm you and satisfy your hunger!
NEEDS:
- Veg!🌱 I rescued all the forgotten bits from my fridge, including potatoes, broccoli, onions, asparagus, mushrooms, butter beans, peas, and spring greens. Honestly you can be creative here.
- Passata
- Curry powder
- Mild chili powder
- Turmeric
WANTS:
- Flour and natural yogurt for the naan
- Nigella seeds
- Garlic
- Fresh chilies
- Coriander
Ok, let’s go!!
First, prep your veg by cutting them into bite-sized pieces. Add the diced potatoes to a pan and pour in boiling water. In another medium-sized pan, heat some oil and simmer the rest of the veg.
While these are cooking, it's time to make the naan bread! Mix plain flour, a pinch of salt, and nigella seeds in a bowl. Add natural yogurt and water, mixing until it forms a smooooooth dough. Turn the dough out onto a floured work surface and knead for about 5 minutes. Return it to the bowl, cover it with a tea towel, and set it aside. Recipes will say around an hour for this, but I am too hangry for that.
Drain the softened potatoes, leaving a bit of water, and add them to the rest of the vegetables. Then toss in the butter beans, passata, and spices. Tip! I use a table spoon of each spice! Let the mixture simmer and thicken.
In another pan, heat some butter, and once it's melted, add the diced garlic. Place the rolled naan in the pan, slicing it into portions. Cook until it turns golden, then flip it over. Ensure both sides are crispy and cooked through.
Finally, it's time to serve! Garnish your naan with coriander and garlic butter, and enjoy dunking!!!
