Sausage Casserole? Think Again…🌶️



Transforming a boring sausage casserole into an irresistible dish that leaves you craving more, this recipe is a saviour for those moments when all you have are some sad veg in the fridge. With its warm and comforting flavours, it's a perfect winter treat for those chilly evenings when you'd rather indulge in some 🌶️spice🌶️ than turn up the heating.

Preparation is key here. Once you've put in the legwork, you can sit back with a generous glass of wine!!!

NEEDS:

- Vegetables (any sad-looking ones will do; I used leek, mushrooms, onion, celery, and carrot)

- Sausages (I used chorizo-style ones for that extra spice)

- Potatoes

- Garlic

- Oil

- Chopped tomatoes

- Passata

- Butter beans


WANTS:

- Salt

- Pepper

- Sage

- Worcestershire Sauce

- Butter

- Single cream

- Balsamic vinegar

- Spring greens (perfect as a side dish)

- Feta

- Spring onions



So let’s get started!!


- Boil your kettle and preheat your oven

- Peel and chop your potatoes for the mash

- Peel and chop your assorted veg, (carrots, onions, leeks, and celery, if you are following)

- Add your peeled potatoes to the boiling water from the kettle and keep an eye on them until they're soft

- Heat your deep-filled frying pan with oil and cook the veg until they're soft and silky

- Slide the veggies to one side and brown your sausages. You could use a separate pan, but who wants to deal with extra washing up?

- Once your sausages have cooked (and look like have that hotdogs or legs tan), add diced garlic, sage, salt, and pepper

- Transfer the sausages to an ovenproof dish

- Add a generous glug of Worcestershire sauce and a splash of balsamic, add passata, butter beans, and chopped tomatoes, then let it simmer gently

- Don't forget about your potatoes! Once they're soft, drain and take them off the heat. Add cream, butter, salt, and pepper to your liking. Start mashing!

- Layer your tomato-veg mix over the sausages and pop the dish into the oven on the grill setting. Let it bubble!

- While your sausages are in the oven, quickly wash your frying pan and cook your spring greens until they're wilted, season with garlic and salt

- After 5 minutes, top your sausages with some crumbled feta and let it cook until golden

- Voilà! Your dish is ready to be served, top with your spring onion and enjoy the golden feta crust on top of your sausage bake, the fluffy and steaming mash, and the garlic-infused greens.

Honestly, you will never look back to that boring casserole!
