The Steaks Are High!! 🥩
Date? Mate? Or just a fancy dinner for one? This has to be my ultimate favourite meal. Of course, steak and chips with chimichurri!
This recipe can be as fancy or pub grub as you want it to be, but one thing it will not be is lacking in flavour!
NEEDS:
- Steak (I used rump, but honestly, go with whatever you fancy)
- Potatoes
- Spring greens
- Salt
- Duck fat or oil (I went with both as I want these chips crispy!!)
WANTS:
- If you are making the chimichurri you will need:
- Parsley
- Garlic
- Chili
- White Onion
Ok, let's go!
Start by preheating your oven to around 220 degrees and boil your kettle
Chop your potatoes into chips! I don't bother to peel as I am lazy, but do as you wish
Add some duck fat (this will make your chips super crispy and kind of like roast potatoes) to your ovenproof dish, and pop this in the oven
Once chopped, add them into your pan with boiling water to cover and a sprinkle of salt
Get your steak out of the fridge and leave this at room temperature to rest
For your chimichurri, finely chop your parsley, white onion, chili, and garlic. Add this to a ramekin and cover in all the oil!! Do not scrimp on this!
Give your chips around 5 minutes to soften. Tip! Once soft, add them to some kitchen roll and pat dry
Pop your chips into the hot fat (make sure they are all covered) and add them to the oven for around 30 mins
At this point, you have time to chill, pick your favorite film or as I usually have to do. Wash up 🫠
Once your chips are around 10 minutes from finishing, add your spring greens into a pan with a touch of oil and salt
Cook these until they are soft
In another pan, add oil and bring this to sizzling!!!
Once your pan is hot (trust me it needs to be hot!), add your steaks. I like mine medium-rare, so cook for around 2 minutes on either side
Tip! Once your steak is cooked, remove from the heat and place on a plate to cool for around 2 minutes. Trust me, this does make all the difference!!
Plate up your greens, chips, steak, and cover with that 🌶️spicy🌶️ chimichurri
Best served with a massive glass of red wine and don't forget napkins, this steak will be juicy!!!
