Feta-Stuffed Beat-Balls…🪩

Okay, no spelling mistakes here! I am calling these beat-balls because trust me, nothing else will beat these.

This Greek-inspired dish will take you 30 minutes, tops, and with minimal washing up. What is not to love!

Ok let’s go!!!!

NEEDS:

- Lamb mince

- Feta

- White onion

- Aubergine

- Cinnamon

- Garlic paste

WANTS:

- Couscous

- Salad

- Mint

- Smoked paprika

- Chili oil

Okay, let's go!

Firstly, start by slicing your aubergine, finely cutting your onions.

Preheat your oven to 220 degrees and boil your kettle.

Grab a bowl and your mince, diced onion, garlic paste, salt, pepper, and cinnamon (trust me, this will make it taste incredible). Mix, mix, mix!

Once everything is combined, form into ball shapes and stuff your feta into the middle.

Add oil to a pan and brown your meatballs and aubergine. Once browned, pop these into the oven for 20 mins! Now onto your couscous! No Ainsley Harriot packets around here!

Mix your dry couscous into a bowl and cover with water. Once this has absorbed, add smoked paprika, chili oil, feta, and salad. Mix until covered.

Now, plate everything up, top with fresh mint and serve!! So quick and easy, a perfect Monday dish!
